Production Technique:

After hand-harvesting the grapes in crates, a gentle pressing initiates the process. The resulting must undergoes a 24-hour skin contact at 5 °C, enhancing the extraction of varietal aromas. Subsequently, fermentation occurs in an autoclave, promoting the development of carbon dioxide, which integrates into the mass, creating the characteristic perlage during the foaming phase lasting approximately 60-85 days. Throughout this period, secondary aromas emerge due to the utilization of yeasts. Following fermentation, tartaric stabilization takes place by cooling the wine to a low temperature, and it concludes with isobaric bottling.
