Costaripa has faithfully embraced the ancient Groppello vine, cultivated in Valtenèsi since at least 1250, adhering to time-honored traditions since 1990. Their Maim expression undergoes a meticulous process, maturing for 12 months in petite oak barrels before being bottled in the spring of the second year post-harvest. Following bottling, it gracefully rests for a minimum of 10 months, unveiling a captivating ruby red hue adorned with subtle garnet highlights. The aroma is a sensory journey, marked by an intense bouquet of violets, exceptionally ripe fruits, and petite forest berries, complemented by a harmonious interplay of spices. This symphony extends to the palate, revealing a well-balanced fusion of flint, pepper, and olive wood, with sweet tannins providing a robust foundation beneath the velvety softness characteristic of the Groppello variety.
